Georgia Last Sunday's dinner had a Hawaiian theme. It's seems i have been given the job of making dessert. So I was on the hunt for something authentic. Thanks to the magic of Pinterest I found this yummy Haupia Pie. It is very rich. So no matter how big your piece is, it's still too much. This week family dinner theme is Czech food. This should be interesting.. Until next week. Enjoy this Haupia pie with a lovely dose of chocolate Chocolate Haupia Pie 1 nine inch unbaked pie shell 2 cups coconut milk 1 cup white sugar 1 cup water scant 1/2 cup cornstarch 1 cup semi-sweet chocolate chips 1 1/2 cups heavy cream 1/4 cup white sugar Bake pie shell according to package directions. Let cool. In a medium saucepan, whisk together milk, coconut milk and 1 cup sugar. In a separate bowl, dissolve the cornstarch in water. Bring coconut mixture to a boil. Reduce to simmer and slowly whisk in the cornstarch. Continue stirring mixture over low heat. It will thicken fairly quickly but you'll want to keep stirring and cooking for 2-3 minutes total (if it doesn't set up right, you probably didn't cook it long enough). Pour half the coconut mixture into the pie shell and stick in the refrigerator. While it sets for a few minutes, mix chocolate chips into the remaining warm coconut pudding. Whisk to melt chocolate into the pudding. After the coconut layer has had a few minutes to set, pull it out of the fridge. VERY carefully pour the chocolate pudding over the coconut layer. There should be enough of a skin set on the coconut layer to keep them separate. If not...oh well. It still tastes good! Refrigerate for at least four hours, preferably overnight. Whip the cream with the sugar until stiff peaks form. Slather over pie and enjoy! Amy I made cookies! Again! And they turned out just swell. Though it said that they would flatten as they baked. That was not the case here. They turned out more like English biscuits. Which I dig. I wasn't in the mood for chocolate and used caramel instead. And I didn't bother with sprinkling sea salt on top. Cookies and pie.. What a yummy week. Amy and Georgia AmyI wished for pizza. So I made pizza... Wingless Buffalo Chicken Pizza From Rachael Ray 2,4,6,8 1/4 pound chicken breast cutlets Extra-virgin olive oil 2 teaspoons grill seasoning such as McCormick's Montreal Steak Seasoning(eyeball it) I used Penzeys Chicago Steak Seasoning, love it! 1 pizza dough, store-bought or from your favorite pizzeria Cornmeal or flour, for dusting 2 tablespoons butter 1 tablespoon Worcestershire Sauce 2 to 3 tablespoons hot sauce, to taste 1/2 cup tomato sauce 1 cup shredded Monterey Jack cheese, 4 generous handfuls 1/2 cup crumbled blue cheese 3 scallions, thinly sliced Preheat the oven to 425°F. Preheat a grill pan over high heat. Place the chicken on a plate and drizzle with olive oil. Season it with the grill seasoning. When the grill pan is hot, cook the chicken for about 3 minutes on each side, until it is cooked through. Stretch the dough to form a pizza, using cornmeal or flour to help you handle it. Set the pizza on a pizza pan to the side. In a medium skillet over medium heat, melt the butter and stir in the Worcestershire, hot sauce, and tomato sauce. Remove the chicken from the grill pan and slice it thin. Add the chicken to the sauce and stir to coat. Cover the pizza dough with the saucy Buffalo chicken, cheeses, and scallions. Bake for 18 minutes, or until crisp. 4 servings. Georgia This past Sunday for the Minghelli family dinner our theme was English food.. And I wanted to go as authentic as I could. I skipped having any form of potato as a side and went with this instead: Smoky Cauliflower Bites 1/4 cup olive oil 1/4 tsp. sea salt 1 tsp. paprika 1/2 tsp. ground cumin 1/4 tsp. ground turmeric 1/8 tsp. chili powder Preheat oven to 450°F. Mix first six ingredients. Add cauliflower florets; toss to coat. Transfer to a 15x10x1-in. baking pan. Roast until tender, 15-20 minutes, stirring halfway. I was not feeling it for cheese in the burgers so I put 1/2 slice of Provolone on my plate. Also, I used fresh spinach instead of arugula. I choose to be strong to the finish. Georgia Donuts.. I love how Amy says she's not a baker an yet every week bakes up with something beautiful. Until next week Amy and Georgia AmyI baked cookies! I forgot they were in the oven as I was playing with Trixie. So the bottoms are crispy. Penzeys Oatmeal Craisin Cookies Mix 1 cup softened butter with 3/4 cup each white and brown sugar. Blend in 2 eggs, 1 tsp. Cinnamon and Vanilla. Add 1 1/2 cups flour, 1 tsp. baking soda and 1/2 tsp. salt. When mixed, add 3 cups oats ( quick cooking or regular). 1 cup craisins ( I used cherries) and 1 cup mini chocolate chips ( I grated some white chocolate). Drop by rounded teaspoons on ungreased cookie sheets. Bake in preheated 350°F oven 15 minutes. If I'd paid attention to the time these would have been good! Georgia Started the new year off right with a little monkey bread. I was attempting to redeem my whole homemade bread disaster by making the dough for the monkey bread. I'm happy to say that the dough turned out beautifully.. The monkey bread wasn't that bad either. Homemade Monkey Bread Dough
