NikitaHappy Easter from the Orthodox side of the world! We are celebrating a week later than our friends and family back home but celebrating His resurrection none-the-less. Carrot Cake happens to be one of my favorite desserts of all time, and I remember loving it going all the way back to 7th grade. At my school, their were two 7th-grade science teachers who were married and in their later years of life. They taught their classes in adjoining classrooms and often rivaled them against each other. Apparently there was a big debate between the couple (as often there usually is) regarding who made the best Carrot Cake. Each teacher had his/her own recipe and brought in cakes for us to sample and vote. My teacher (the wife) had an incredible recipe that included crushed pineapple. It kept the cake moist and sweet. She handed out the recipe to her class, and I made that cake for years. Family events, holidays, etc.....everyone in the family would dote over my Carrot Cake. Sad to say, I don't have that recipe anymore but have found many very similar to the original. Today we are celebrating, so bring on the cake! Happy Easter everyone! He is RISEN! He is risen indeed
