I'm still on a pizza kick... I recently read that the most repinned Julia Child recipe on Pinterest is her eggplant pizza. Julia Child? Eggplant? Pizza? I'm in! This is not a difficult recipe. And I chowed downed! Julia Child's Eggplant Pizza Adapted from cherryblossomkitchen.com Makes 7-8 pizzas 1 eggplant, about 8 ounces 1 tablespoon salt 2 tablespoons olive oil 2 teaspoons Italian seasoning 10 large basil leaves, cut into strips(optional) 1/3 cup Parmesan, freshly grated 1/3 cup low-fat mozzarella, grated crushed red pepper flakes for sprinkling over finished pizza (optional) 1 cup pizza or marinara sauce Your favorite toppings 1. Cut off both ends of the eggplant, then slice into 1/2- inch thick slices. 2. Place slices on a double layer of paper towels, sprinkle both sides with salt and let sit for about 30 minutes to draw out liquid. 3. Preheat oven to 375°F. while eggplant slices sit. 4. Wipe the eggplant dry with paper towels to remove the salt. 5. Spray a baking sheet with olive oil or nonstick cooking spray. Add eggplant slices to pan and brush the tops with olive oil and sprinkle with seasoning. 6. Roast the eggplant about 25 minutes or until softened but not mushy. 7. Remove eggplant from oven when done and adjust oven to broil. 8. Spread a couple of tablespoons of sauce on top of each slice, sprinkle with cheese and top with your favorite toppings. 9. Broil until the cheese melts and is slightly browned. Watch carefully. 10. Top with additional Parmesan and basil ribbons, if desired. 11. Enjoy! It only seemed appropriate to go to the husbands new favorite place. The KP International Market in Rancho Cordova. This place has everything you can think of in the way of foreign food. You'll find fresh meat, produce, a food court, full on restaurant, bakery AND a karaoke bar. Seriously. Everything you can possibly think of. Today we decided to visit the bakery. I'm not entirely sure they make everything here. Or make anything here. From what I've heard they use local bakery's. Ran got the flower bun. The inside was filled with sweet pea paste. But didn't taste anything like sweet peas. I got the choco bear bun. The dough tasted more like the kings Hawaiian sweet rolls filled with chocolate pudding. Can't go wrong there. Both were pretty tasty.. No regrets.. They also carry homemade baklava. So I'm looking forward to trying that. If you happen to be in the area check out the KP International Market. Until next week.
