AmyI guess it was a 3191 Miles Apart weekend for me. In the case of the Sunday baking I referred to their book A Year Between Friends. Each month has at one recipe from each lady. September has Peanut-Crispy Rice Bars. Having made some Rice Krispie bars recently, I discovered that I do not like Karo syrup. They were sickly sweet. These bars use organic ingredients and are sweet without being sugary sweet. Mind, I used Jif as opposed to organic peanut butter. Only because I had Jif on hand. My bars didn't turn out quite as uniform as they should but they taste far better than my last endeavor. These I would make again! Georgia Saturday was Randy's cousin Angie's birthday. Her request was Corned Beef and Cabbage. Which auntie made. It was delish by the way. Whenever we have dinners together we always try to have a "theme". So knowing that auntie was going make Corned Beef and Cabbage I wanted to stick with the whole Irish theme. Since Corned Beef and Cabbage is pretty much a meal unto itself I decided to make a traditional Irish Soda Bread. I've never made soda bread before so I wasn't too sure what to expect. Considering it's four simple ingredients it was much tastier then I expected. And not nearly as dense. The next time you make yourself corned beef and cabbage you may want to consider making some. Side note: Angie loves Corned Beef and Cabbage.. If I had to guess it's because her Minghelli self thought she was Irish.. Just saying.. Irish Soda Bread Ingredients
