NikitaI'd like to think that I could cross this challenge off my bucket list, but I feel I can do better. Jelly Roll cakes have always impressed me. I remember making one with my mom during my middle school years (back when you could bring baked goods to school). It was a Black Forest cake with chocolate and cherry flavors, but I didn't remember the difficulty of it. This particular recipe calls for a very light, fragile and fluffy carrot cake to be rolled up. Trying to remove this from the pan onto a kitchen towel proved to be extraordinarily challenging. I had to recruit help from ye ol' teenager. Anyways, part of my cake broke. 😭 But the picture above was what I saved. The flavors were incredible, and we enjoyed it during our Labor Day celebrations! Carrot Cake is among one of my most favorite desserts. Next time, I would also whip the frosting with my new KitchenAid whisk versus the mixer attachment because I felt it was a little thick. I like a fluffy frosting. Next time, for sure!
