Amy I receive many food-related emails from various sources. Bloggers, Food companies, and magazines to name a few. Recently I was scanning my email when one from Taste of Home got my attention. "We tried ice cream bread". Say what??? Another culinary mash up that's pure lunacy? Contraire mon frere! This is quite genius. 2 to 3 ingredients in 30 minutes(including bake time). I am in! In the end you get a moist and spongy unadorned cake, of sorts. Ice cream and self-rising flour. The ice cream has all of the wet ingredients contained within. Rather brilliant. The ice cream flavor is your choice. When some thought coupling the right ice cream with seasonal fruit would make for a quick dessert. I was in the mood for a more decadent ice cream so I went with Ben and Jerry's Phish Food. I topped the still warm bread with a dollop of some homemade whipped cream. This would be a clever idea for gift giving. Or perhaps baking several loaves with different ice cream flavors and slicing them up and serve on a tray at a party. Less time consuming and less stress! Ice Cream Bread 1 cup ice cream of choice, softened 3/4 cup self-rising flour 1 tablespoon sugar Mix ingredients together( you don't even need a mixer) and pour into loaf pan. Bake at 350°F for 25 minutes. Another option is to bake it in a tart pan for 20 minutes. Slice it up like a pie and serve it topped with a scoop of ice cream. On a normal day eating at that time of day is not appetizing. So I'll try to make myself a little something to take to work to have for breakfast. But who has time (or more importantly) who wants to make something at 6ish in the morning. So I've made up these little ramekins of eggy goodness Super easy, add whatever yummies sound good to you. For mine: 6 - 8 eggs grated cheddar cheese 3-4 strips of bacon (I precooked mine) Mix all together pour into 4 ramekin sized dishes (make sure they are oven proof) Bake for 30 minutes in a 350 oven Side note: I have in the past added sauteed onions, chopped tomatoes. I've seen where someone added fresh spinach. So many great options to add Until next week
