AmySince I had great luck with my sweet potatoes I decided not to push said luck and avoided the oven for a Sunday treat. I found this recipe on Food52 and it's easy and versatile. Banana jam is an excellent way to use up ripe bananas. Spread on breads with peanut butter right down to throwing it into a margarita. I broke up Graham crackers in a bowl and topped with yogurt and banana jam. If you don't wish to use rum then add extra vanilla extract or coconut or maple extract. Enjoy!
