Mint JulepGeorgiaWhen Amy mentioned the Kentucky Derby my first thought was.. I Want to go!! But I can't.. So I baked something in honor of it. I think we both went with the Mint Julep flavors AmyWhile the rest of you celebrate Cinco De Mayo I'll be preparing for the Run For the Roses. That is a complete lie, I'll be working. However, I am rooting for My Boy Jack (Odds 16-1) in the Kentucky Derby. I was scanning the latest issue of Good Housekeeping when I found what looked like a tasty cupcake. Mint Julep Cupcakes! Sans booze and fresh mint. But I made two cupcakes as I would devour every cupcake I would bake. I also made a few bottles of Mint Julep Iced Tea. I don't remember the recipe but it's basically sweetened iced tea with mint, bourbon, fresh lemon and fresh lime juice. Here is the link for the recipe: This years winner a horse named Justify!!
