Amy And speaking of cranberries... An early Christmas cookie exchange! Cranberry, Chocolate Chip, and Oatmeal Cookies From The Cranberry Cookbook Published by Hamlyn Ingredients
Instructions: 1. Preheat the oven to 350°F. Grease two baking sheets. 2. Beat the butter and sugars together until soft and fluffy. Add the egg, flour, oatmeal, and chocolate chips and mix together until smooth. 3. Place about 16 large spoonfuls of the mixture, 2 inches apart, on the baking sheets. Scatter dried cranberries over each spoonful. Bake in the oven for 10 minutes, or until the cookies begin to brown around the edges but the centers remain soft. Do not overcook or the chocolate will burn. 4. Leave to cool on the baking sheet for 15 minutes before transferring to a wire rack to cool. I rather enjoy these simple little treats. Freeze option: Cover and freeze unbaked potpies up to 3 months. To use, remove from freezer 30 minutes before baking (do not thaw). Preheat oven to 425°. Place pie on a baking sheet; cover edge loosely with foil. Bake 30 minutes. Reduce oven setting to 350°; remove foil. Bake 55-60 minutes longer or until golden brown and a thermometer inserted in center reads 165°. Yield: 2 pies (6 servings each).
