Amy I hadn't planned to make dessert for New Year's Day but I had a box of white chocolate pudding on my shelf and it called to me. What luck! The Farm Journal's Complete Pie Cookbook had a handy dandy quick ass recipe involving instant pudding. Starting the New Year off with positivity my friends. The crust came apart so I just mixed it in and as Dad used to say, "It all goes the same place anyway.".
Snow Cream Pie Graham Cracker Pie Crust ( homemade or store bought, it's up to you) 1 (3 3/4 oz.) pkg. instant vanilla pudding ( or in my case, white chocolate) 1 c. Sour cream ( I used plain Greek Yogurt) 1 c. Milk 1/2 c. Strawberry preserves ( I opted for blueberry) Combine the pudding mix with liquids as directed on package. Mixture will be quite liquid. Pour into 8-inch pie crumb crust. Chill until set, at least 1 hour, or longer. To serve, spoon strawberry preserves over top. Or other fruit preserves or sweetened sliced fruit, like strawberries or peaches. Makes 6 servings. Note: Use a baked pie crust. I sprinkled a bit of cinnamon and cocoa on top of the pie to add a bit more flavor. Not the worlds greatest pie but it does well for a spur of the moment deal. |
